Ingredients
Makes 2 dozen
2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup (1 stick) unsalted butter
1 cup sugar
1 large egg, lightly beaten
1tablespoon milk
1 teaspoon pure vanilla extract
Directions
Mix together flour, salt, and baking powder in a medium bowl.
In a large bowl cream butter and sugar; add dry ingredients, and mix well
add egg, milk, and vanilla; mix well.
Separate the dough to incorporate different food colourings.
Transfer dough to a work surface. Shape into discs, cover with plastic wrap, and refrigerate for at least 1 hour.
Preheat oven to 180C (350 degrees F) Line baking sheets with greaseproof paper.
On a lightly floured work surface, roll out dough to 1/8-inch thickness and cut.
Transfer to prepared baking sheets, leaving an inch in between.
Leftover dough can be rolled and cut once more. It will need to be put back in the fridge to set if it has become too warm.
Bake for 10 minutes, until lightly golden.
Transfer to wire racks to cool. Once cooled decorate.
